Clem's Oregon Trail Smoked Fish Seasonings
For the most delicious smoked fish you will ever eat. Use 1 tablespoon of
seasoning per pound of fish. Each package contains enough
seasoning for 15 pounds of fish.
Clem's smoked fish seasonings is a dry
cure seasoning, like his jerky seasonings. The powdered hickory smoke
added to the fish seasonings creates a flavorful smoked fish whether it is dried
in your home oven, dehydrator, or smoker.

Directions for preparing home oven smoked fish
Step 1: |
Sprinkle Clem's Fish Seasoning (1 tablespoon per pound of fish) over your fish fillets or chunks and massage seasoning into the fish with finger tips until the seasoning is even over all the fish. If using whole fish score the skin and rub the seasoning into the score and cavity. |
Step 2: |
Stretch the seasoned fish over Clem's Easy-Clean Drying Screens or oven racks, and place in a preheated 200-degree oven. Be sure to prop the oven door open about ½ inch to let the warm moist air out. Seasoned fish can also be dried in a smoker or dehydrator. |
Timing
The timing depends on the thickness of the fish, the moisture content, the amount of fish being dried, and also the altitude. If at sea level 5 pounds of fish, ½ inch fillets, medium moisture content, at 200 degrees will take about 2½ hours.
